The origins of saffron seem to be in crest, the largest in the Greek islands. To obtain 1 gram of dry saffron, it takes 150 flowers. Used in cooking, but also for perfumes and dyes, saffron has anti -depressive virtues.
To prepare saffron syrup, infuse the pistils for a few minutes in a small amount of lukewarm water before cooking them in a large pot of water with sugar. Mix regularly throughout the cooking of the syrup for a better distribution of the saffron aromas.
What a spice to replace the saffron ?
To replace the saffron, bet on red turmeric. The latter, however, substitutes the first in terms of coloring, but not in terms of flavors.
